Colorado isn’t sure yet if it would like to stay with Winter or move on into Spring. It actually snowed on Tuesday night but it was back up to 60 degrees today. So yesterday I felt like making a crockpot meal while it was still pretty chilly outside.
Today’s recipes are some of my favorite Slow Cooker Meals!
Cory’s White Chili
(named after my brother-in-law who makes this with quite a bit more calories than I do!)
1 pound boneless skinless chicken breast, cooked and cut into bite size pieces
1 medium onion, chopped
1 1/2 teaspoons garlic powder
2-16 ounce cans great northern white beans, drained
1-15 ounce can chicken broth
1 teaspoon salt
1 teaspoon oregano
1/2 teaspoon pepper
1/4 teaspoon red pepper
2-4 ounce cans diced green chilies
1 cup light sour cream
1/2 cup half and half
Add all ingredients to slow cooker except sour cream and half and half. Cook on high for 3-4 hours. Add sour cream and half and half in the last hour of cooking. Serve immediately. (sooo yummy!)
And here is a much simpler version of chicken chili:
Easy Chicken Chili
1 pound boneless skinless chicken breast, cut into bite size pieces
3-14 ounce cans diced tomatoes with chilies and garlic, undrained
1 ounce package taco seasoning mix
2-15 ounce cans white beans, drained and rinsed
Combine all ingredients in slow cooker. Cook on low for 7-9 hours or until chicken is tender and no longer pink.
