Summer 2010 Family Vacation Guide ~ Kimeve Edmonson of GBG

Awww Summer! It’s coming you know? As a freight train. Here in Southern California palm trees seem to wave hello, the breeze and scent of the ocean is a little stronger and the Pacific Coast Highway beckons for a leisurely drive.

Still, something is missing. The sound of children playing. Growing up my brother and I were never allowed to say “I’m bored.” If we dared let it slide from our mouths my Mom would quickly reply. Would you like me to find something for you to do? Chills would race up my back. Thoughts of sweeping, wiping, mopping would run through my head. Oh no no no, Mom I’d say. I’ve plenty to do.

Our electronic world is a blessing. Good thing is we can have almost anything in an instant. Bad thing is we can have almost anything in an instant. Video games and texting seem to rule. My childhood weekends were a mix of playing outside till the street lights came on, dodgeball games, grab the bacon, tetherball, red rover, swimming till I looked like a prune and so on. Summer time called for a vacation from my job at school and evolved into a full blown career of creating FUN and MEMORIES.

I am amazed as I watch some of our youth today. I see them content in doing nothing. Sitting. I wonder, are they thinking? We have a young man of 18 years old as a neighbor. He wanted a Big Stick popsicle. We live 2 blocks away from a convenience store. He thought about that Big Stick for 2+ hours, saying it was too far to walk. Huh? We used to love to walk to the local market with a couple of quarters jiggling in our pocket. How trusted and free we felt stepping out in the wind with the option to pick and enjoy anything we wanted. I know parents became more rigid as news of child predators hit the street. I am a protective parent. Like my mother, I insist on knowing Who, What, Where, When, How and for How long when my son goes outside our home.  I know it’s not entirely the video games. I know all kids aren’t this way. It just makes me think.

What happened? Why are most too tired? Are we as parents too tired? Too tired to say something, to do something, to make a change? Lately, I’ve been seeing a lot of articles about nutrition. How what we do and don’t eat effects us now and for the long run. How children’s diets have been linked to behavior issues. How we are a nation where heart disease plagues many but unlike other diseases, heart disease is avoidable by the choices we make. Yikes, by choice? Reminds me of free will.
Below I share with you simple ways my family and I have made the choice to start making our health a habit. My hope is it will enhance your health & the health of your family as well.

7. Push for 80% – Decide where to begin and work up to 80%, if you eat well, think well and so on 80% of the time – Success is guaranteed

A family favorite Summer Breakfast:
Turkey Sausage
Spinach
Red Onion
Mushrooms
Roma Tomato
5 egg whites + 2 eggs
Sharp Cheddar shredded
Salsa preferably homemade

*Side note, visit your Farmer’s Market for the freshest goods & you’ll be supporting your community too!

Cook turkey sausage separately, Saute all veggies in a smidgen of grapeseed oil till the onions are almost transparent (add the spinach last). Separately whip up eggs (I add a little water if too thick). Turn veggies skillet up and add the egg mixture. Scramble till set as you like. Plate and sprinkle with cheese, top with tomato and salsa. Really good with sourdough toast & strawberry preserves. YuM! Enjoy!

*Giveaway* Purchase a bottle and receive a $5 gift card  of your choice to Walmart or Starbucks!
