Party Style Chef’s Salad
1 head romaine lettuce
2 cooked chicken breasts, cut into strips
1 tomato, sliced
2 hard-boiled eggs, sliced
12 whole black olives
1 ripe avocado, cubed
1 red bell pepper, chopped
Dressing:
2 tablespoons apple cider vinegar
1 tablespoon ketchup
4 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
Mix dressing and chill. Tear lettuce into 2 inch pieces and place in mixing bowl. Add remaining ingredients. Pour dressing over salad. Toss gently.
Festive Taco Salad (our family’s FAVORITE!)
1 pound ground beef, browned
1-2 ounce package taco seasoning
1 -16 ounce bottle French dressing
1 medium sized head of ice burg lettuce, chopped
2 large tomatoes, chopped
1 large green bell pepper, chopped
4 cups cheesy nacho chips, crushed
Mix taco seasoning with beef according to package directions. Let cool. Mix all ingredients together and serve immediately. Top with sour cream and sliced black olives.
Grammy’s Peanut Butter Pie (Family favorite dessert!)
1/3 cup peanut butter
3/4 cup powdered sugar
1 large box of vanilla pudding, prepared according to package directions
2 cups whipped topping
1-9 inch backed pie shell
In a small bowl use a pastry blender to combine 1/3 cup peanut butter and 3/4 cup powdered sugar and set aside. Line a baked pie shell with 1/3 of the peanut butter mixture. Make 1 large box of vanilla pudding and place it on top of the peanut butter mixture. Cool. Top with 2 cups of whipped topping and sprinkle the remaining peanut butter mixture over the entire top of the pie. Chill well.
Easy Mini Cheesecakes
1 dozen vanilla wafers
2-8 ounce packages cream cheese
1/2 cup sugar
1 teaspoon vanilla
2 eggs
Line muffin pan with 12 foil liners. Place a vanilla wafer in each liner. In a mixing bowl, combine cream cheese, vanilla, and sugar. Beat well. Add eggs and beat until well blended. Pour cream cheese mixture over wafers. Fill each liner about 3/4 full. Bake at 325 degrees for 25 minutes. Garnish with fruit or chocolate.
