During the summer time I love to use skillet recipes. It’s so nice not having to heat the whole house up by baking in the oven-and the even more amazing these recipes is how quickly you can make them!
Skillet Chicken Dinner
4 boneless chicken breasts
1-14 ounce can Chicken Broth1 teaspoon garlic salt
3/4 cup uncooked white rice
1-16 ounce package frozen vegetable combination, thawed
1/3 cup grated Parmesan cheese
Add chicken to skillet coated with cooking spray and cook until browned. Remove chicken. Add broth, garlic salt, rice and vegetables. Heat to a boil. Cover and cook over low heat for 15 minutes. Stir in cheese. Replace chicken. Cover and cook for 10 minutes or until done.
Donna’s Stir Fry
1 tablespoon Olive oil
2 cups frozen chicken fajita strips; flame broiled, seasoned & sliced
1 cup frozen mixed peppers
1 cup frozen mixed veggies
1/2 teaspoon Lemon Pepper
1/2 teaspoons Italian seasoning
1/2 teaspoon powdered garlic
3 cups rice, cooked
Tortillas
In your largest frying pan, add olive oil and turn to high. Add all of your frozen veggies, chicken and the spices, turning heat to medium high after a few minutes. Stir and cook until desired doneness. Serve over rice with warm tortillas.
