Weekly Recipes for Busy Moms ~ Cookies

I absolutely love cookies!!! Out of all the desserts they are right up there as my very favorites! As a present when my son was just born a group of my wonderful friends sent over a big batch of Snickerdoodle Cookies–major yum! In case you are craving some here’s the recipe so you can bake your own! New favorites are always great as well–these Oatmeal Cookies look like they’d be a big hit in our house!

 

Old Fashioned Snickerdoodles

1/2 cup butter or margarine

3/4 cup sugar

1 medium egg

1 teaspoons baking powder

1/4 teaspoon salt

1 2/3 cups flour

2 1/2 tablespoons white sugar mixed with 11/2 teaspoons cinnamon

 Preheat oven to 400 degrees.  Combine margarine and sugar in a large bowl.  Add the egg and beat until creamy.  Add baking powder, salt and flour.  Stir until you have a nice thick dough. Combine the cinnamon and 2 1/2 tablespoons sugar in a small bowl.

Shape the dough into 1 inch balls.  Roll them in the cinnamon-sugar mixture.  Place the coated balls on an oiled cookie sheet.  Using the bottom of a smooth cup, press the dough down to flatten the cookies slightly. Bake  for 10 minutes. 

Jeanne’s Oatmeal cookies

 1 cup firmly packed brown sugar

3/4 Cup shortening

1/2 cup granulated sugar

1 egg

1/4 cup water

1 teaspoon vanilla

3 cups quick oats, uncooked

1 cup all purpose flour

1 teaspoon salt

1/2 teaspoon baking soda

 Preheat oven to 350 degrees.  In a large bowl, beat brown sugar, shortening, and sugar until creamy.  Add egg, water and vanilla; beat well.  Add combined oats, flour, salt, and baking soda; mix well.

Drop dough by rounded teaspoons onto ungreased cookie sheet. Bake 11-13 minutes or until edges are golden brown.  Remove to wire rack.  Cool completely.  Store tightly covered. Makes about 5 dozen
