Weekly Recipes For Busy Moms ~ Easy Breakfast Recipes
I have a confession to make–I’m not a breakfast person at all! In fact I’d probably skip it all together most days if I could! However, I’ve read many, many things that talk about how important breakfast is! It helps you to maintain a healthy weight and it also helps your brain to work correctly. So instead of skipping it I’ve tried to find easy, tasty alternatives to yucky cold cereal. These recipes both sound delicious and are perfect if you’re like me, or even if it’s your favorite meal of the day!
French Toast Casserole
1-16 ounce loaf of cinnamon raisin bread, cubed
6 large eggs, beaten
3 cups milk
2 teaspoons vanilla extract
Powdered sugar
Layer the bread cubes evenly in a greased 13×9 baking dish. beat the eggs, milk and vanilla in a separate bowl. Pour mixture over the bread cubes. Cover and refrigerate for at least 2 hours or overnight. Bake for 50 minutes at 350 degrees or until golden brown. Sprinkle with powdered sugar. Serve warm topped with syrup.
Strawberry Cream Cheese Crepes
2/3 cup milk
2 eggs
2 tablespoons sugar
6 tablespoons flour
2 tablespoons butter
Strawberry preserve
Cream Cheese
In a blender, mix all ingredients except jelly and cream cheese. Heat butter in small frying pan. Pour 1/4 of batter into pan. Flip when edges are brown. Recipe makes 4 crepes. Fill each crepe with 1 teaspoon of preserves and 2 teaspoons cream cheese. Roll and serve.
