Weekly Recipes for Busy Moms ~ 25 minute Chowder Recipes
It’s finally starting to feel like fall here in Boston! Soon we’ll be turning off the AC and on the heater! There is nothing like delicious soup for a comfort food on a brisk Fall day! Now living in New England of course I have to share recipes for “chowda”!!! I love Boston accents but no, haven’t picked up one yet–I’m still pronouncing all my Rs!
Crab Chowder
3 tablespoons butter
1/2 cup chopped onion
1 stalk celery, chopped fine
3 cups whole milk
1-14 ounce can cream of potato soup
1-8 ounce can creamed corn
1-6 ounce can crabmeat
1 cup red potatoes, cooked and chopped
1/4 teaspoon salt
Dash of thyme
Dash of pepper
Sauté onions and celery in butter. Add remaining ingredients. Simmer on low for 15 minutes, stirring frequently.
Ham and Corn Chowder
2 medium red potatoes, cubed
1 tablespoon butter
1 small onion
1 cup chopped cabbage
2-15 ounce cans clear chicken broth
1-16 ounce can cream-style corn
1/2 pound cooked ham, diced
1/2 cup shredded sharp cheddar cheese
Salt, pepper
Melt butter in a large saucepan. Sauté onion and cabbage until tender. Add chicken broth, corn, ham and potatoes. Cover and simmer for 15 minutes until potato is tender. Add cheese and stir until melted. Season to taste with salt and pepper.
