Weekly Recipes for Busy Moms ~ Easy Salads
Ever need something healthy, tasty, and easy for lunch? Try one of these salads!
Chicken and Black Bean Salad
4 cups cooked cubed chicken
2 cups frozen corn, thawed
1- 15 ounce can black beans, rinsed and drained
1 red bell pepper, chopped
1 cup diced Cheddar Jack cheese
1 cup chunky salsa
1/4 cup fresh cilantro, chopped
1/2 cup mayonnaise
Combine salsa, cilantro and mayonnaise in small bowl. Mix well. Combine remaining ingredients, add salsa mixture and toss gently. Cover and chill for at least an hour.
Tortellini Salad
1- 9 ounce package refrigerated cheese tortellini
1 cup broccoli florets
1-15 ounce can kidney beans, drained
1 cup cubed cooked ham
1/2 cup carrots, shredded
1/4 cup sliced black olives
1/2 cup zesty Italian salad dressing
Cook tortellini as directed on package, adding broccoli to the boiling water; drain and combine with remaining ingredients. Stir gently to combine. Cover salad and refrigerate 1 hour before serving. Top with grated parmesan cheese and serve.
