As I’ve mentioned before I’m not much of a breakfast person. I do love muffins for breakfast though! These recipes look delicious and since you make and freeze them ahead of time they’d be super easy to pull out of the fridge and pop into the oven for an early morning treat!
Pumpkin Chocolate Chip Muffins
1 1/2 cups sugar
1 1/2 cups light brown sugar
3/4 cup plus 3 tablespoons canola oil
1-15 ounce can pumpkin puree
4 large eggs
3 1/3 cups flour
2 1/2 teaspoons baking soda
2 teaspoons salt
2 tablespoons cinnamon
1 teaspoon nutmeg
1/4 teaspoon cloves
1 cup mini chocolate chips
In a mixing bowl, beat sugars with oil, pumpkin puree, and eggs until well blended.
Combine flour, soda, salt, and spices in a bowl; stir into pumpkin mixture until well blended. Stir in the chocolate chips. Fill greased muffin cups 3/4 full. Bake at 350 degrees for 25 minutes, or until firm. Freeze in sealed sandwich bags and then place in heavy duty freezer bags. Allow to thaw before serving.
Chocolate Chip Granola Muffins
2 cups biscuit baking mix
1 cup of your favorite granola
2 tablespoons honey
1 egg
2/3 cup milk
1 cup mini chocolate chips
Combine all ingredients in a mixing bowl. Mix with a wooden spoon until well blended. Fill greased muffin cups 2/3 full. Bake at 400 degrees for 15 to 20 minutes, or until a wooden pick inserted in center comes out clean. Freeze in sealed sandwich bags and then place in heavy duty freezer bags. Allow to thaw before serving.
