So I recently just bought a bunch of oatmeal with the intention of using it for a healthy morning breakfast….so far it hasn’t happened. These cookies on the other hand…look super delicious….I think I know what I’m going to do with all that oatmeal!
Oatmeal Coconut Chocolate Chip Cookies
1 cup softened butter
1/2 cup sugar
3/4 cup packed brown sugar
1 teaspoon vanilla
1 egg, beaten
1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/8 teaspoon nutmeg
3 cups uncooked instant oats
1 12 ounce package chocolate chips
1 cup coconut
Preheat oven to 375 degrees. In a large bowl, beat butter with sugar, and brown sugar on medium speed until creamy and lightened in color (about 4 minutes). Add vanilla and egg, mix on low speed until incorporated. With a wire whisk stir flour with baking soda, salt, and spices until mixed well. Add flour mixture to creamed mixture, mixing well. Stir in oats, and then fold in the chocolate chips and coconut. Drop by spoonful on ungreased cookie sheet. Bake 7-9 minutes, or just until they are set. Leave the cookies slightly under baked and let set up for a softer, chewier cookie. Store in tightly sealed container. Makes about 5 dozen.
Healthy Oatmeal Cookies
2 cups brown sugar
3 cups wheat flour
2 tsp. salt
2 tsp. soda
1 tsp. baking powder
2 cups applesauce
6 cups rolled oats
2 eggs
2 tsp. vanilla
Mix dry ingredients. Add applesauce, eggs & vanilla. Mix well. Drop by teaspoonfuls onto greased baking sheet. Bake 350 for about 10-12 minutes
