Are you a spinach fan? I’ve always enjoyed it but don’t get to eat it much because hubby isn’t a fan. These two recipes look like they might win you over even if you haven’t considered yourself a “popeye” kind of person before! Not to mention how super healthy it is for you!
Angela’s Spinach Salad
1 pound fresh baby spinach
4 hard boiled eggs, sliced
6 slices bacon, cooked and crumbled
1/2 pound fresh mushrooms, sliced
1 sweet onion, sliced
Dressing:
1 cup olive oil
1/4 cup sugar
1/3 cup ketchup
1/4 cup apple cider vinegar
1/2 teaspoon salt
2 teaspoons Worcestershire sauce
Mix dressing ingredients and refrigerate. Combine salad ingredients and top with dressing. Top with toasted almonds, if desired. Serve immediately.
Chicken and Spinach Salad
1-6 ounce bag baby spinach
2 cups cooked chicken breast, cubed
1-11 ounce can mandarin oranges, drained
1/4 cup green onions, sliced
1/4 cup toasted slivered almonds
Dressing:
1/4 cup olive oil
3 tablespoons apple cider vinegar
1 tablespoon sugar
1 tablespoon soy sauce
1 teaspoon dark sesame oil
1/2 teaspoon ginger
Mix dressing ingredients and chill for 1 hour. Gently toss all salad ingredients in large bowl. Add dressing and serve.

It is a known fact that green vegetables such as spinach are antioxidant rich and thus help in preventing cancer and treating ailments such as diabetes. This is a wonderful recipe and I’d like to see more on greens.
